Non-Citrus Fruit Aromas

In the process of stone-fruit juice concentration, part of the juice natural water is being evaporated.
During this stage, together with the water some of the aroma volatile fractions are being evaporated as well.
These compounds are being recovered to form a water soluble aroma of the named fruit.
